I would go with a 9-10" wide rim, 5 on 5.5 bolt pattern.
Your 81 could be narrow or wide track. Not sure what offset you would want.
Some will say that a 8" rim will hold a bead better, but I read some testing that showed there really is little difference, I have never popped a bead with 10" rims and 35s. 8" will give the rim a little extra protection.
One big gain you get with a 10" rim is better lateral stability on road. So 8" if you do serious wheeling, otherwise i'd say go with the 10", it's a little easier on the tire on all around driving (side forces on the bead at highway pressures). And will do just fine for casual wheeling.

Dhange the bolt pattern. Still cant help with the back spacing, but the 8 or 10 inch rims stuff is the same,.
A rim with 3.5"-4" backspacing, 5 on 4.5" bolt pattern
