I wouldnt drop coverage. Even if you hit a tree or something off road, its still covered under collision coverage. And taking it to the trails is a risk too. Even if tow it to a trail, it could still get rear ended by an uninsured driver, or dozens of other things could happen to it.
If you let your insurance company know its not driven regularly, and spends 99% of the time in your driveway, they might give you a very low rate on it.

I keep liability only on my trail rig. My Insurance Co actually thinks I drive it occasionally which helps keeps the rate on my Acura TL low. I get mileage surveys in the mail every year but I just shred them. They never ask anything else.
Having liability is pretty nice if something stupid happens. Should you hit anything or anyone. For $250 bucks a year I'd rather have it, even though mine left the driveway once in the past year. -

When I creased a fender and hood at RC my insurance company covered it under comprehensive. They said that's because it wasn't being driven on a public road when it happened. -
I keep full coverage because of the personal injurey pertection. Its an add layer of money in case someone gets hurt.

What level of insurance covers theft?

If you collide with an object (thats not airborne) it would always be collision (with the 2 companies I worked for)
